Soft Millet for Breakfast or Supper
You can serve this for breakfast (with or without butter or milk), or season it with a little additional butter and salt and some freshly ground pepper and serve it as a supper side dish.

Instructions
Step 1
Melt the butter in a heavy saucepan, add the millet, and turn it to coat with the fat. Cook for several minutes, stirring occasionally, then add 3 cups water and a scant 1 teaspoon salt. Bring to a boil, then reduce the heat so that it just simmers. Cover and cook until all the water is absorbed, about 20 to 25 minutes. Give it a stir every so often to makes sure it isn’t sticking. Once the water is absorbed, take a taste to make sure the grains that haven’t broken down are soft enough to be pleasing. They may still have a little crunch. If they are too crunchy, add more water and continue cooking until they have softened.
