Malai broccoli India Serves 4 as a side This is a vegetable side with real character. Broccoli, tender but still with a little bite, is cloaked in a thick, nutty cream and a whisper of green cardamom. In the hot oven, mimicking the heat of a tandoor, everything begins to caramelise and char.

Instructions

Step 1
Heat the oven to 200°C (400°F) and line two large baking trays with baking paper.
Step 2
Cut the broccoli into small florets and put into a large mixing bowl.
Step 3
In a blender, combine the remaining ingredients and whizz to a creamy paste – it doesn’t matter if it’s not completely smooth. Scrape into the bowl and turn everything well so the spiced cream gets into all the broccoli crevices.
Step 4
Spread out on the baking trays and roast for 20 minutes, turning the pieces halfway through. The broccoli should be just tender with a good char on the edges.
