Instructions
Step 1
In a small bowl, combine the tomatoes, lime juice, cumin, salt, and pepper. Set aside.
Step 2
In a large skillet over high heat, spray the corn tortillas with cooking spray and fry for 1 to 1 minutes per side, watching carefully for smoking or burning. Set the tortillas aside on plates.
Step 3
Reduce the heat to medium and sauté the black beans for 3 to 5 minutes to soften them. Layer the beans on top of the tortillas.
Step 4
Respray the pan and fry or scramble the eggs to your liking. Either preparation should take 3 to 5 minutes. Layer the eggs on top of the beans on the tortillas.
Step 5
Top with the fresh tomato salsa that you made in step 1.

If dairy is not a trigger for you, feel free to enjoy cotija or cheddar cheese on your dish.
