Instructions
Step 1
Chop red onion into small pieces, chop apple/pear into small 1cm cubes
Step 2
Fill saucepan with water, add 1tbsp salt and bring to the boil
Step 3
Boil for 10-12 minutes (depending on how al dente/hard you like your pasta)
Step 4
Meanwhile, in a large frying pan, add a drizzle of vegetable oil and fry bacon lardons for 3-4 minutes
Step 5
Then, add chopped onion until it softens, around 3 minutes

Add the garlic puree and stir for another minute
Step 7
The pasta should now be done. Drain pasta in a colander, pop back in the saucepan and stir in a drizzle of olive oil to keep the pasta from sticking together

Add 150ml water to the frying pan and 2 tbsp wholegrain mustard
Step 9
Once the frying pan is boiling, add 25g of the grated parmesan and the crème fraiche
Step 10
Wait for about two minutes until the cheese starts to melt
Step 11
Add the pasta into the frying pan and stir through the sauce
Step 12
In a bowl, mix the chopped lettuce, apple/pear, 1 tbsp mustard and 1 tbsp olive oil
