Angwamo / Braised rice

Braised rice || Angwamo with PHD lol This is one of Ghana’s finest if you asked me. A simple aromatic rice bussin with absolute deliciousness. It’s usually served with freshly grind pepper, sardines and fried eggs not forgetting the onions and tomato.

Instructions

Step 1
In a saucepan add in oil, ginger, shallot and sauté till fragrant
Step 2
Next add in cured beef (toloo beef) and fry for 7 minutes on medium heat
Step 3
Next add rice, Latifah spice mix stir together and cover to fry for 3 minutes ( this process intensifies the flavours and aroma…my humble opinion though )
Step 4
Next add in water, seasoning, goat meat ( if you’re using) stir and allow to simmer for 6 minutes on medium heat
Step 5
Next stir to distribute heat and cover with an parchment paper and turn the heat to the lowest setting and allow to cook slowly until ready
Step 6
Next add chopped parsley fluffy and enjoy.
