1. Warm the milk to the touch in a medium saucepan with the milk and 1 tbsp sugar from the cup measurement you measured earlier.

2. Add the yeast (make sure that the milk is not too hot ) and keep it aside for the yeast to bloom.

3. In a large bowl add the eggs and soft butter and the rest of the sugar, and mix to combine.

4. Mix the milk mixture into the egg mixture.

5. Add the flour in thirds, stirring between each addition.

6. Knead the dough for 5 minutes, or until smooth, on a lightly floured surface. Gently poke the dough with your finger; it should bounce back up.

7. Place the dough in the same bowl and gently coat with oil. Wrap the bowl in clingfilm.

8. Allow the dough to rise for an hour in a warm area, or until doubled in size.

9. Remove the dough and knead it for 5 minutes on a floured surface until smooth. Place the dough in the same greased bowl and wrap the bowl in clingfilm, let it rise in the refrigerator overnight.

10. Roll out the dough on a floured surface and out the doughnuts and donut holes with a donut cutter or glass and piping tip or bottle cap.

11. let the donut rise for 45 minutes until puffed up.

12. Heat oil in a heavy frying pan and fry the donut until golden brown and keep it aside on a cooling rack.
