Instructions
Blanch Tomatoes First
Step 1
1. Cross cut the Tomatoes from both sides.
Step 2
2. Add Tomatoes into the boiling water for 45 seconds. Less amount of time needed for smaller Tomatoes.

3. Transfer Tomatoes into the ice cold Water.
Step 4
4. Now you can easily peel your Tomatoes.
Sauce
Step 5
1. Add 3 tbsp of Olive Oil into the Pan.
Step 6
2. On a medium-high heat cook 1/2 of diced Yellow Onion and 1/2 of Bell Pepper for 2 minutes.
Step 7
3. Add Slicer Leftovers.
Step 8
4. Season with Garlic Powder, Salt and Black Pepper.
Step 9
5. Add 2-3 peeled and diced Tomatoes. Cook for few more minutes, stirring occasionally.
Step 10
As the Veggies are cooked through, remove them from heat and blend into the Sauce.
Last Step

1. Slice the Veggies

2. Put 2/3 of the Sauce amount to the bottom of your Baking Dish.

2. Arrange the slices.

3. Cover the Veggies with remaining 1/3 of the Sauce.

4. Season with salt and Pepper.
Step 16
5. Bake for 90 min at 300F (150C).
Step 17
6. Serve with Fresh Parsley and Parmesan (optional).
