Blackened Salmon Tacos

These tacos are a great choice for dinner; the combination of spices is delicious and they are pretty straight forward to prepare. The recipe serves 3 tacos per person (with a small appetite); I recommend more tacos per person if a salmon fillet is not enough for you.

Instructions

Step 1
Mix all spices and cover the salmon fillets with the mix. You can add everything to a closed recipient and shake.
Step 2
Make the guacamole. Cut the onion and add it to a bowl with cold water. Smash the avocados and add the tomatoes, a pinch of salt, the juice of half lime, the onion and a handful of finely chopped cilantro. Mix well.
Step 3
Add two tablespoons of olive oil to a pan on medium-high heat. Add the salmon and cook through all sides. When it seems done in the outside, break the fillets with a fork and a knife; if still raw, put a lid on and turn the heat off. Keep it covered for a few minutes until it's done but don't overcook!
Step 4
At the same time of starting step 3, start heating the tortillas in a separate pan. Set the heat to high and once the pan is hot, start heating the tortillas side to side. Keep them between two dishes to maintain the heat.
Step 5
Start building your tacos. Add a layer of chipotle mayo to the tortilla (this will protect the tortilla from becoming moist and break down whilst eating) and the salmon.
Step 6
Serve with lime to squeeze, guacamole and cilantro leaves.
