Instructions

Step 1
1. Remove pork chops from the fridge and let sit out 1 hour to bring to room temp.
Step 2
2. Preheat the oven to 375°.
Step 3
3. Finely slice both onions and set aside.
Step 4
4. Season pork chops with salt and pepper.
Step 5
5. In a large non stick pan heat up 1 tbsp butter and sear pork chops for 3-4 minutes on each side.

6. Remove from the pan, and transfer to an oven safe dish.
Step 7
7. Add the rest of the butter and sliced onions to the pan and cook until they begin to caramelize and develop a golden brown color.

8. Add balsamic vinegar and continue to cook for 2-3 more minutes.

9. Add beef stock and dijon mustard to the pan and cook on high heat until it has thickened slightly.
Step 10
Lower heat. Pour most of broth into another bowl/container. Slowly whisk flour into remaining broth and continue whisking to cook it.
Step 11
Slowly add broth back in and let simmer until thickened to gravy.

10. Top pork chops with the french onion gravy

11.Bake in the oven for 15 minutes and broil 1-2 if needed.

12.Check internal temp (at least 145°) and let rest 5-10 minutes before serving.
