citrus solstice salad

1 step
Prep:10min
Want to supercharge your salad with nutrients? Add broccoli sprouts! Just one serving contains a hundred times higher concentration of sulforaphane, a powerful compound found in cruciferous vegetables, than does broccoli itself. It’s widely touted as anticarcinogenic and anti-inflammatory, and is thought to support heart and brain health. This simple salad plays on the bitterness of the arugula, broccoli sprouts, and radishes, offset with the sweet note of clementine and a balsamic drizzle

Instructions

Step 1
1. Toss together the arugula, clementine, radishes, and broccoli sprouts in a large serving bowl. 2. Sprinkle with the crushed walnuts, and finish with a balsamic glaze when ready to serve. Make a nut-free version by using pumpkin seeds instead of walnuts, or simply omitting. Balsamic glaze or reduction is available at most grocery stores.
