Step 1
In a large bowl, gently combine the turkey, herbs, chopped onion, coriander, and cumin. Form the meat into 4 patties and season with 1 tsp salt. Fry or grill the patties until an instant-read thermometer inserted into the centers reads 165°F, 4 to 5 minutes per side.
Step 2
In a medium bowl, combine the cucumber, tomato, sliced onion, lemon juice, oil, remaining ½ tsp salt, and black pepper.
