Instructions

Step 1
Cook brown rice according to instructions
Step 2
Coat sweet pot in some veg oil and spices, and roast for approx 40 mins at 180-200
Step 3
Fry onion for a few mins, add garlic, Chili and spices. After a few more mins, put in the rest of the Chili ingredients and chopped coriander stalks
Step 4
Combine salsa ingredients and season to taste
Step 5
Mash avo and add oil and seasoning
Step 6
Serve bowl with coriander leaves, chopped spring onion and tortilla chips
