Instructions
Step 1
Add oats, nuts, hemp hearts and coconut to food processor and pulse until mealy. Add all other ingredients and process on dough until combined. Press or roll out on a large cookie sheet on parchment to 1/4 to 1/2 inch. Bake at 325 convection for about 30 minutes or until golden. Score and cut into 24 pieces and cook again for 7-10 minutes until crispy.
Step 2
Store in airtight container or freeze. Honey or other sweetener can be subbed for the maple syrup. Likewise, you can sub other nuts, flax seed, sunflower seed, etc to equal 1 cup. If you don’t like cinnamon, use 1/2 teaspoon or ginger or leave out.
