BARBECUED BROCCOLI WITH HONEY AND BLUE CHEESE DRESSING

Broccoli works well here, but large spring onions (scallions) or baby leeks would work too. Charring over coals gives an unrivaled smoky taste, but failing that, a stovetop chargrill gives good results. If you splash a little water over the broccoli as it cooks, the steam produced will help to keep the vegetables moist so they don’t dry out.

Instructions

Step 1
Lightly oil and season the broccoli with salt and pepper. Place over the coals of a hot grill and cook for 5 minutes or so until blackened and tender. Alternatively, heat a large ridged griddle pan until hot and char the broccoli. Splash a little water over the broccoli as it cooks. The steam produced will help to keep the broccoli moist.
Step 2
Mix all the dressing ingredients together in a bowl and, once the broccoli is charred and just before serving, dress the broccoli.
Step 3
Put the soft blue cheese in a medium bowl and beat together with the cream until it’s smooth and has a drizzling consistency. You can use a large whisk or a wooden spoon for this.
Step 4
Scatter the dressed broccoli onto a serving dish. Sprinkle over the fried breadcrumbs and drizzle the heads of the broccoli with the blue cheese cream. Alternatively just dip the broccoli into the cream – perfect finger food!
