Instructions
Step 1
Wash and soak the rice for 5-10mins
Step 2
Brin water to boil, and cook rice until they are about 90% done. (I use soorya long grain basmati rice and they took about 13mins). Drain the rice once done and set aside.
Step 3
In a separate pan, add some oil, sugar, green cardamom, milk and coconut. Mix and cook until fully combined and the sugary syrup is ready.
Step 4
Add the boiled rice into the sugar mix. Mix properly and cook on high heat for further 5mins so the syrup reduces down a bit.
Step 5
Add peeled and slivered almonds and cashews and mix again
Step 6
Top with food colours of choice (i used red, orange, yellow and green) and mixed marabba/mini rasgullas or raisins), cover with a tea towel and put lid on. Turn heat low and put on damm for 10mins.
Step 7
Mix the rice roughly before serving. (Tip: Do not over mix it or the colours will bleed into one another and all will end up looking the same)
