Banana Caramel Mini Bundts

Simple family banana bread recipe, modified to make a special holiday dessert bread. Will yield 6 mini bundts, each serving is 1/6 of a whole.

Instructions

Step 1
Preheat oven to 350 degrees.

Step 2
Grease & flour mini bundt pan(s).
Step 3
Sift flour in small bowl, set aside.
Step 4
In separate bowl, cream sugar, eggs, shortening, and baking soda, scraping sides as you go, until well blended.
Step 5
Cut 3 bananas into slices, add to creamed mixture, blend again until no chunks, scraping sides as you go.
Step 6
Add flour a little at a time until well blended.
Step 7
Cut remaining banana in half lengthwise, then into slices, hand mix into batter.
Step 8
In small, microwave safe bowl, add caramel bits and water. Microwave per bag instructions.
Step 9
Spoon batter evenly between 6 wells.
Step 10
Drizzle caramel on top, keeping away from sides of pan (to prevent burning).
Step 11
Bake 25 minutes or until toothpick test comes out cleanly.
