Ingredients

Crust
1 cupgranulated sugar
1 tspbaking powder
½ tspcinnamon
1egg
3 cupsall-purpose flour
½ tspsalt
1 cupunsalted butter
cold, cubed

Instructions
To make the crust:
Step 1
Preheat oven to 350F and grease or spray a glass baking dish and set aside.
Step 2
In a food processor, add the sugar, flour, baking powder, salt, and cinnamon and pulse a few times to combine. Add the butter and process until the mixture resembles coarse sand. Finally, add the egg and process just until the dough comes together and can hold shape, but is still crumbly.
Step 3
Pour about half of the mixture into the prepared baking dish and press to form a crust.
To make the peach layer:
Step 4
In a small bowl, combine the cinnamon, cornstarch, and sugar. Sprinkle over the diced peaches and toss to coat. Add the lemon juice and mix once more to coat.
Step 5
Pour the peach mixture over the prepared crust and spread evenly.
Step 6
Pour the remaining crumb topping over the peaches, leaving some of the mixture clumped together.
Step 7
Bake for 60-70 minutes, or until the top is lightly golden. Cool completely and slice into bars.
