Cajun Shrimp and Sausage Grits Bowl

Ingredients
4 servings
1 packagesmoked sausage
sliced
1peeled and deveined shrimp
Seasoning
Original, to taste
Garlic Pepper Seasoning
to taste
2shallots
finely minced
5 clovesgarlic
finely minced
1 cupheavy cream
½ cupParmesan cheese
Cajun seasoning
to taste
2 cupsfresh spinach
½ cupcherry tomatoes
sliced
¾ cupgrits
3 cupschicken stock
½ teaspoonsalt
1 tablespoonbutter
Instructions
Step 1
1. In a medium pot, bring grits, chicken stock, salt and butter to a boil. Reduce heat to low and cook 20-30 mins. Stirring occasionally until the grits are thick and creamy. *Add more chicken stock or water according to your preference. Set aside on low simmer.
Step 2
2. In a skillet, add sliced sausage and brown on both sides and then set aside. In the same skillet, add the seasoned shrimp (Chilau’s original and garlic pepper seasoning and paprika to taste)

3. Once the shrimp is done, remove and set aside.
Step 4
4. In the same skillet, add shallots and garlic and cook until translucent. Add heavy cream and season with Cajun seasoning to taste. Add spinach and tomatoes and the add the Parmesan cheese. Simmer until the sauce has thickened.
Step 5
5. Add the shrimp and sausage back into the skillet and simmer for about 2-3 minutes.
Step 6
6. Add the cooked grits to a bowl and then top with the shrimp and sausage mixture. Top with fried salmon nuggets and add remaining sauce on top.
For the Fried Salmon Nuggets
Step 7
Salmon, cubed Bamma Fish Fry Seasoning
1 egg
2 cups of buttermilk Oil for frying
Step 8
1. In a medium bowl, add buttermilk and eggs and whisk well. 2. Add cubed salmon and marinate for at least an hour.
3. Remove the salmon from the buttermilk mixture and add to the fish fry seasoning. Coat well and add into oil heated to 350 degree oil. 4. Fry until golden brown.
