Homemade Cosmic Brownies

(This recipe is borrowed from an Instagram post, not my recipe.) Cosmic Brownies were a childhood favorite. A few tips before baking these: 1) do not sift your flour, 2) Coffee is not necessary but brings out chocolate flavor and the coffee flavor bakes out, 3) I've made batches with and w/o the vegetable/coconut oil and both are delicious, 4) I had to order the coated chocolate chips on Amazon

Instructions

1. Preheat oven to 350

2. heat butter and sugars in a microwave for 2 minutes. Pull out and stir, let it come to room temp. Can also do this over stove top, careful not to burn the butter and sugar

3. To the butter mixture, mix in eggs (one at a time) vanilla, coffee, salt, corn starch, baking soda and oil (if adding). Mix until everything is well combined

4. Now in batches mix in your flour and cocoa powder. I like to mix it in folding motions. Very important not to over mix as you don't want hard brownies

5. Grease and line (parchment paper) a 9x13 baking sheet. Pour in your brownie mix and spread to the edges, it will be really thick

6. Bake for 22-24 minutes, let completely cook before topping with ganache and sprinkles

Heat the heavy cream either in microwave or on the stove until slightly bubbling and hot. Pour over the chocolate chips in a heat safe bowl and let sit for 10 minutes. Begin to mix the melted chocolate and cream together. Let sit for at least 30 minutes to thicken before spreading on brownies
