Instructions

Step 1
Add diced onion and diced bacon to a large pot and cook down
Step 2
Then add chorizo and cook until the meat is starting to crisp up
Step 3
Add carrots, celery, pepper and cook until soft
Step 4
Add seasonings
Step 5
Add rice and cook for a minute to toast the rice
Step 6
Add 4-6 cups of chicken broth and cook covered until the rice is cooked through and there is no broth left. Sometimes you have to add a little broth if the liquid is gone and the rice is still not cooked.
Step 7
Let cool and garnish with cilantro
