Ingredients
6 servings
1 headbroccoli
medium-large, cut into florets
1carrot
medium, matchstick cut, or shredded carrots will do just fine, no more than 1/2 cup
1onion
medium, chopped sometimes i add two onions, because i love onions in my soup ha!
8 ozcheddar cheese shredded
1 Tbsoil
or butter
3 cupschicken broth
1 ½ cupshalf & half cream
light, or heavy cream, milk will do to, but may not be as creamy
¼ tspnutmeg powder
1 Tbshot sauce
optional
sauce thickener
optional
Instructions
Step 1
Heat oil or butter in the pot, add onions and saute for 5 minutes
Step 2
Add chicken bouillon, broccoli, carrots, nutmeg
Step 3
Place on Manual high pressure, sealing position for 4 minutes
Step 4
Do a quick release and stir in cream
Step 5
Place pot back on saute, but do not bring to boil - stir in cheese and hot sauce
