Step 1
Preheat oven to 350.
Step 2
Mash bananas in bowl. Add egg and vanilla and stir together.
Step 3
In separate bowl mix together dry ingredients. Add dry ingredients to wet and gently mix until just combined. Fold in nuts.
Step 4
Pour into greased muffin tray. Bake for 20-25 minutes until golden brown and knife inserted comes away clean. Allow to cool.
Step 5
Store at room temperature 1-2 days. Store in fridge 4-5 days in air tight container. Can be frozen for up to 3 months.
