My take on the coral tomato feta pasta! This is a well balanced meal and SO good and easy to make!

Instructions

Step 1
Preheat your oven to 400 degrease

In a baking dish, add tomatoes and chopped spinach

In a small mixing bowl, combine juice from one lemon, oil, and seasoning to taste

Drizzle oil over spinach and tomatoes, reserving a small amount for later. Combine.

Create an opening in the middle of the dish and add your block of feta cheese

Cover cheese in the remaining of the oil mixture and top with red chili flakes to taste

Bake at 400 for 35 minutes

While that bakes, season your chicken to taste and cook until internal temperature of 160
Step 9
While your chicken cooks, cook your pasta of choice and drain
Step 10
Once your tomato and feta mixture is done cooking, stir or blend until well combined
Step 11
Add on pasta and chicken, stir well
Step 12
Top with mozzarella and bake until the cheese melts
