Instructions

Step 1
Crush the garlic and dice the onion, aubergine, and red pepper.

Step 2
In a medium sized bowl, pour the water to the couscous and cover. Season with a pinch of salt and pepper, mix well, and let it sit until it has absorbed the water (around 5 minutes).

In the meantime, heat a large pan with some olive oil. Once hot, add the onion and the garlic and sautee for 2 minutes.

Once the onion and garlic turn golden, add the pepper and the aubergine and sautee for a couple more minutes. Then, drain the chickpeas and add them to the pan.

Once the vegetables are sauteed to your taste, add the couscous and the spices and mix everything well. Make sure to try the couscous and add more of the spices if necessary.

Once everything is properly mixed, it's ready to serve and enjoy! Tip: you can add some chopped parsley as garnish.
