Instructions

Step 1
Heat 1 tablespoon of oil in medium sized skillet over medium high heat
Step 2
Add bell pepper, black beans, corn, onion, sarlic, cumin, chili powder, salt.
Step 3
Cook for 4-5 minutes until peppers and onions are tender. Turn off of heat and stir in the cilantro.
Step 4
Preheat electric griddle to 350 degrees.
Step 5
Add a flour tortilla and top with cheese. Add veggie mixture to half the tortilla and fold the tortilla over the veggie side. Toast to golden brown and then flip to the other side until the cheese is melted.
Step 6
Enjoy with salsa, sour cream, etc.
