Ingredients

1 tsppaprika
1 Tbspharissa
1 ½ Tbspolive oil
0.5 headcauliflower
large
2beetroots
diced
1 ½ cupsbutter beans
1cucumber
diced
1shallot
diced
1 cupcouscous
cook according to packet
½ cupfresh dill
¼ cuphazelnut
chopped
salt
to taste
Golden Dressing
Instructions
Step 1
Preheat the oven to 400 degrees F (200 C).
Step 2
Combine the paprika, harissa and 1.5 tbsp olive oil. Cover the cauliflower and beetroot with the oil mixture. Transfer to an oven-safe dish and cook for 30 minutes.
Step 3
Combine the butter beans with 0.5 tbsp olive oil and cook in the oven for 20 minutes.
Step 4
Blend or whisk all the dressing ingredients.
Step 5
To a bowl, add the couscous, cauliflower, beetroot, beans, cucumber, shallots, dill, hazelnuts and dressing. Mix until thoroughly combined. Adjust salt to taste. Enjoy!
