GRILLED AVOCADO BURGER with marinated beans and crème fraîche

Instructions

Step 1
1 Rinse the beans and drain them well in a colander.
Step 2
2 Light the barbecue and make the Smoked Tomatoes. You can use unsmoked tomatoes, but the smoky flavour adds a fantastic dimension to the bean mixture. Chop 2–3 tomatoes and mix them and the other ingredients with the marinated beans in a bowl. Stir carefully and put to one side.
Step 3
3 Halve the avocados and remove the stones, then carefully scoop out the avocado flesh with a spoon. Cut slices that are as big as possible – about 1 cm (½ in) thick, depending on the size of the avocado. Put the slices on a plate and brush them first with lime juice and then with oil.
Step 4
4 Grill the avocado slices quickly on the barbecue over a really high heat or burn off the surface with a blowtorch. The surface of the avocado should be caramelised, nearly burnt, while the inside should be cold and retain its consistency.
Step 5
5 Butter the buns on the cut surface and grill (broil) them quickly on the barbecue.
Step 6
6 Slap a generous dollop of marinated beans on each bun. Then add 2 slices of avocado, a dollop of crème fraîche and a little parsley and coriander. Finish off by sprinkling over a pinch of cayenne pepper.
