Step 1
Put the pork cheeks in a casserole or a baking dish, it does nkt have to be too large. Poor a spoon of olive oil, salt and pepper and the rub the all over the meat. Poor the beer until the meat is fully cover. Add the sage, rosemary and garlic too. Use some plastic wrap and seal the container. Put now the meat into the fridge and let it rest in the fridge for 10 or 12 hours.

Remove the plastic wrap from the container and the meat out from the beer. Put the meat on a cutting board then dry it with some paper. When the meat is dry, chop it roughly.

Keep the beer used marinate the meat aside since it is going to bebused later.

Warm up a couple of spoon of olive oil in a pot and roast the meat for 5 minutes in high heat.

Poor in the pot the beer, add the tomato paste and decrease the heat. Add the potatoes and cover the pot with a lid. Cook now the stew for at least one hour. Both the potatoes and the meat has to be tender. If it is not, cook it for a little longer.
