Hazelnut and sour cherry granola

Combine the delicious flavours of maple, toasted hazelnuts and sour cherries in this simple granola. This easy recipe can be altered to suit your tastes, with extra nuts, fruits and seeds, as you see fit. A jar of this granola makes an excellent gift, or just make so you always having some at hand in your store cupboard. Serve with thick coconut yogurt.

Instructions

Step 1
1 Preheat the oven to 160°C/325°F/gas mark 3.
Step 2
2 Mix together the oil and maple syrup in a jug.
Step 3
3 Combine the oats, hazelnuts and cherries in a bowl, then pour over the oil and maple syrup mixture. Stir together until everything is coated.
Step 4
4 Spread the mixture out evenly over two baking trays, then bake in the oven for 40–45 minutes, stirring the mixture every 10 minutes to encourage oaty clumps to form.
Step 5
5 Allow the granola to cool fully on the baking trays before sealing in clean jars. The granola will last up to 2 months EASY TIP Serve this granola with ice-cold almond milk, apple juice or a generous spoonful of your favourite non-dairy yogurt.
