Instructions

Step 1
The night before: marinade the beef with the garlic cloves, 1 diced onion, the bouquet garni, sliced carrots, salt, pepper and red wine. Cover and refrigerate.
Step 2
The next day, sieve the ingredients and retain the jus.
Step 3
Take the pieces of beef and soak them in the vinaigre, then fry in 1/2cm of oil.
Step 4
Add the rest of the ingredients into the frying pan. Dust with the flour. Mix and then cover with the rest of the jus that you retained. Add water if there’s not enough wine juice. Cook for 3-4 minutes.
Step 5
Cook in a pressure cooker for 90 minutes on a low heat. Or 3-4 hours on a gas hob.
