Instructions

Step 1
Add butter or oil to a pan over medium heat. Add and minced garlic and onion and simmer for 1 to 2 minutes until fragrant.
Step 2
Next, you’re going to add in your chopped carrots, peas, corn, and potato, give them a stir and let them sauté with the lid on the pan until veggies have softened.
Step 3
Once your veggies have softened, you’re going to add in your 3 tablespoons of butter in 3 tablespoons of flour and give it a stir before adding in your chicken and bacon.
Step 4
Once your mixture is combined, you’re gonna add in your chicken broth and heavy, whipping cream, stir and let simmer until the mixture thickens.
Step 5
While your mixture is thickening, you’re going to line your cast-iron or baking dish with a puff pastry or pie crust. I used a premade pie crust for mine.
Step 6
Once the mixture is thick enough your liking, you’re going to pour the mixture into the pie crust, and then top with a second pie crust, making sure to use a paring knife to cut small slits in the top pie crust.
Step 7
Bake the pot pie at 425 for 30-35 minutes. Once out of the oven let cool for about 15 minutes.
