Cauli Steaks
2 HeadsCauliflower
Cut into 3/4 inch thick steaks
3 Tbspolive oil
2 TbspRice Bread Crumbs
1 TbspNutritional Yeast
½ tspsmoked paprika
0.25 TspGarlic Powder
salt
pepper

Instructions
Step 1
Preheat oven to 200°C and line a baking tray. Spread cauliflower steaks on the tray.

Mix together olive oil, nutritional yeast, smoked paprika, garlic powder, salt and pepper. Brush over both sides of the cauliflower steaks. Sprinkle over the rice bread crumbs and bake in the oven for 25-30 minutes, turning over halfway, or until tender.

Meanwhile, blend all rocket pesto ingredients until smooth.

Serve with hummus spread on a plate. Then top with a cauliflower steak. Dot pesto over the steak and garnish with pine nuts, chilli powder and chopped parsley. Enjoy! Store steaks and pesto in the fridge for 3-4 days.
