Instructions

Step 1
Caramelize your onions: heat 2 tbsp of butter in a pan over medium low heat. Add the onions and stir often for 5 minutes, or until translucent. Lower the heat and continue to cook the onions for 40 min, stirring often so they do not burn. They should be a beautiful golden color by the end
Step 2
Rinse your rice in a colander until the water runs clear.
Step 3
In a large saucepan, bring the rice and 2 1/4 cup water to a boil. Then reduce the heat to low, cover, and simmer until the water had absorbed all the water and is fluffy - roughly 16 minutes
Step 4
Uncover the rice and stir in caramelized onions, dill, cranberries, pistachios, almonds, lemon zest, salt and pepper
