Instructions
Step 1
Bring a large pot of salted water to a boil
Step 2
Wash carrots, mushrooms, ginger, and scallions
Step 3
Prepare produce
a. peel and mince garlic
b. trim and thinly slice scallions, separating the whites from the greens
c. peel and mince ginger
d. trim and thinly slice mushrooms
e. peel and mince carrots
Step 4
Make Chili Garlic Oil
a. In a microwave safe bowl combine sesame seeds, half of garlic, 1 1/2T. sesame oil, pinch of salt & chili flakes
b. cover bowl with plastic wrap
c. microwave 30 seconds and set aside
Step 5
Cook Noodles
a. after water is boiling add ramen noodles
b. cook with stirring for 2 minutes or as package directs
c. drain and toss noodles with oil
d. put noodles in different bowl/pot
Step 6
Simmer Broth
a. heat drizzle of oil in noodle pot over medium heat
b. add scallions whites, ginger, and remaining garlic. cook 30 seconds
c. stir in 3 1/2 cups water and add bouillon and soy sauce
d. bring to a boil
e. cover and reduce heat to low
f. let simmer until ready to serve
Step 7
Cook Chicken
a. while broth is simmering, rinse chicken and pat dry
b. season with a bit of salt
c. heat oil in a large pan over medium heat
d. add chicken and cook through 5-7 minutes per side
e. drizzle with sesame oil and turn chicken a few times to coat.
f. transfer to cutting board to rest

Cook veggies
a. carrots i. heat oil on large pan over medium heat ii. add carrots and cook until softened
b. mushrooms i. heat oil in large pan over medium heat ii. coook until browned and softened, about 3-5 minutes
c. spinach i. heat oil on large pan over medium heat ii. cook until wilted, about 2-3 minutes iii. if necessary, cook spinach in batches
Step 9
Finish and Serve
a. slice chicken crossways
b. divide noodles between bowls
c. pour broth over noodles
d. tope each bowl with as much of the toppings as you prefer
