Koko’s Tangy Black Bean Salad
Inspired by the best thing I’ve ever eaten at our pals Koko and Kelly’s. I was instantly hooked the fi rst time Koko made this for us. Poolside snack with chips? My favorite. Side for a cookout? Absolutely. Topping for a tostada? Easy. Tangy from the feta cheese, smooth from the black beans, and you’d never guess that it’s only 6 ingredients. Equal parts nourishing and refreshing!
