Instructions
Step 1
- Preheat the oven to 425F.
- Wash potatoes
Step 2
Prick the potato several times with a fork. Place on a plate and microwave for 8 minutes.
Step 3
Wash, cut, tenderize, and season chicken with complete seasoning, little salt, and pepper.

Step 4
Remove potatoes from the microwave and brush the oil all over the potato's skin. Roll the potato in the salt and pepper to coat.
Step 5
Place directly on the rack in the preheated oven for 55 minutes.
Step 6
Wash and dry tomatoes & cucumber. Slice em up. Slice the tomatoes into quarters. Chop the red onion.

Step 7
You get some chill time. Start the next step when the potatoes have 15 minutes left.
Step 8
When the potatoes have 15 minutes left, start cooking the chicken on medium heat (4 min each side). Let the chicken rest for 5 minutes.
Step 9
Put the salad together. Don't forget the croutons. Slice the chicken. Serve
