My mother-in-law’s hearty, simple red lentil soup. This is perfect on a cold day with a piece of buttery crusty bread! Swap the beef broth for vegetable broth to make this vegan, it tastes just as good!

Step 1
Add all ingredients to a large pot and bring to a boil. Cook until all ingredients are soft. Use a potato masher or an immersion blender to bring soup to your desired consistency. Add salt and pepper to taste.
