These potatoes are fantastic and so fast! Make extra so that you can use leftovers for a quick addition to other meals throughout the week.

Instructions

Step 1
Toss washed potatoes in a large skillet with the remaining ingredients. Bring to a boil, cover. Reduce heat to medium and cook for 20 minutes. Give the pan a quick shake occasionally to move the potatoes about.
Step 2
Remove the lid after 20 minutes. Check potatoes for tenderness and if needed cover for another 5-10 minutes.
Step 3
Reserve 2 cups (1lb) of potatoes for Friday’s nicoise salad.
