Dough
2 ¼ teaspoonyeast
1 ¼ cupwater
warm, 110-115 degrees
1 tablespoonsugar
2 teaspoonssalt
1 tablespoonoil
plain flour
Calzone Filling
Instructions
Dough
Step 1
Warm up water in the microwave to reach 110-115 degrees. Add to the kitchen mixer bowl.
Step 2
Add yeast to the water, let sit for one minute.
Step 3
Combine 2 cups of flour, 1T sugar, and 2 teaspoons salt in a mixing bowl.
Step 4
Gradually add flour mixture to yeast/water mixture.
Step 5
Add ½ cup of more flour as needed until a soft dough ball has been established on your mixer paddle.
Step 6
Place dough on a lightly floured surface.
Step 7
Knead for 7-10 minutes. Add flour as needed. Don't add too much, it will become tough!
Step 8
Place dough into a large Ziploc bag and label. Your dough will need to rise at room temperature for 1-2 hours
Calzone Filling
Step 9
Preheat the oven to 375 degrees. Place a layer of parchment paper on a baking sheet.
Step 10
Cut your dough into 1 inch slices down the center of the dough, lengthwise

Roll each dough portion out 4-5 inches wide.
Step 12
Brown sausage, chopped onion, and minced garlic over medium heat.
Step 13
Place each sausage mixture along one side of the dough, and place pepperoni on top of the sausage mixture.
Step 14
Sprinkle minced parsley over the meat mixtures.
Step 15
Layer a portion of mozzarella cheese over the rest of the ingredients.
Step 16
Fold the sides of the dough together and pinch the seams so your mixture will not leak.
Step 17
Brush melted butter over the top of the dough.
Step 18
Sprinkle parmesan cheese and Italian seasoning over the bread dough.
Step 19
Cut 2-3 smaller air vents in the top of each calzone to allow steam to escape during the baking process.
Step 20
Bake for 15-20 minutes.
Step 21
Slice and serve with warmed pizza sauce on the side.
