Instructions
Step 1
Thinly slice 3 cloves of garlic. Heat 3 tbsp oil in large pot over medium. Add sliced garlic and cook, stirring, until light golden brown, 2-3 minutes. Using a slotted spoon, transfer garlic to a paper towel lined plate.
Step 2
Heat same pot with garlic oil over medium high. Add pork and pinch of salt, cook, braking up pork in to large pieces, until browned, about 5 minutes.
Step 3
Peel and finely chop ginger, then add to same pot. Cook until fragrant, about 1 minute.
Step 4
Add chicken broth, 1 cup water, and 4 tbsp tamari soy sauce to pot. Bring to boil over high heat, then reduce to medium. Simmer for 10 minutes.
Step 5
Meanwhile, bring a second pie of salted water to a boil. Add noodles and cook, stirring occasionally to prevent sticking, until al dente, 6-8 minutes. Drain noodles then rinse under cold running water
Step 6
Add spinach to pot with soup and stir until wilted, about 1 minute; season to taste with salt and pepper
