This is one of my favourite lunches and was even before I became vegan. You just can’t go wrong with these flavours but be warned, you will have dragon breath after rubbing raw garlic on the toasted baguette!
It’s totally worth it though, I deffo wouldn’t skip that step. It creates a gorgeous garlic bread vibe and then when you add the tomatoes with basil *chef’s kiss* It’s like a mini pizza!

Instructions
Step 1
Pre-heat oven to 170° (fan). Thinly slice baguette into 6-8 bite size pieces per serving. Place on baking tray and in the oven for 7 mins.

Wash tomatoes and cut into small pieces. Place in a bowl with salt, pepper, olive oil; chopped basil and mix.

Once the bread is done, take it out of the oven and allow to cool for a couple of mins. Peel clove then carefully rub garlic on each slice of bread.
Step 4
Distribute tomato mix evenly onto the slices of bread with a teaspoon - enjoy!
