Instructions

Step 1
Preheat your oven to 400°F (200°C).
Step 2
On a lightly floured surface, roll out the puff pastry sheet to about 1/8 inch thickness. Cut the puff pastry into 6 even rectangles and put three slits down the middle of 3 of rectangles.
Step 3
In a small saucepan, heat the strawberries, sugar, and lemon juice over medium heat until the strawberries are soft and the mixture has thickened, about 5-7 minutes.
Step 4
Place a spoonful of the strawberry compote onto one half of each dough circle. Fold the other half of the dough over the filling and press the edges together to seal.
Step 5
Place the puff pockets on a baking sheet lined with parchment paper. Use a fork to crimp the edges and make a few small slits on top of the dough to allow steam to escape.
Step 6
Bake the puff pockets for 15-20 minutes, or until they are golden brown.
Step 7
Serve the puff pockets warm and enjoy!
