this is from a Gordon Ramsay recipe: after trying to make it, i was so impressed with the outcome that i thought it deserved a place here. the ingredients aren't all specific measures, as the quantities depend on personal preference.

Step 1
set out: large pan to fry the steak, chopping board and big knife, small plate to rest the steak
Step 2
prep: take the steak out of the fridge 20 mins before cooking to get it to room temperature, rub with oil and season with salt& pepper. get the pan on the heat and set out all ingredients ready to use - slice the shallots, mushrooms and parsley, measure out the sauce, mustard, cream and brandy.
Step 3
olive oil in the pan, and then place the steak into the hot pan and sear, 30 seconds per side, once. set aside.
Step 4
add the shallots to the same pan and season, then add the mushrooms, a knob of butter and crushed garlic.
Step 5
add a splash of Worcester sauce and tablespoon of Dijon mustard, then add the brandy and flombé.
Step 6
after the flames have died down, add the cream and mix in freshly chopped parsley.
Step 7
once again, place the steak into the pan and cook for 1 minute per side until it has reached your preferred state (i find that more than 5 mins is well done).
Step 8
plate with sautéed rosemary potatoes and asparagus. a good wine pairing for this dish would be a fruity red wine such as a Shiraz.
