These S'mores brownies my dad described as a mouth hug! It is warm and gooey inside and to top it all off, crunchy biscuits and melted marshmallows on top!

Instructions

Add a layer of Tennis biscuits

Then in a bowl, mix the melted butter, canola oil, white sugar and brown sugar on high speed

Then add the eggs and Vanilla essence to this bowl and mix it on high speed again for about 1 min.

Sieve the flour and Cocoa Powder into the wet mixture and use a spatula to fold it until combined.

Layer the brownie batter onto the tennis biscuits in the baking pan

Smooth it out evenly with the spatula until there is no evidence of biscuit

Put it into the oven for 25-26 min at 180°C/356°F

Be super generous with the mini Marshmallows and add on top

Put it back into the oven at 180°C/356°F with the top heating element setting on. Keep a watchful eye between 1-2 minutes until the marshmallows become a light brown. Don't leave it or else it will burn!
