Instructions
Step 1
In a medium bowl, combine bran, flour, baking powder, and baking soda.

Add berries and stir to combine.

In another medium bowl, whisk together orange juice concentrate, buttermilk, and egg.

Add wet ingredients to dry ingredients and use a large spatula to combine.

(Don't overmix; about 10 strokes should be sufficient)

Meanwhile, heat a well-seasoned cast-iron skillet over medium heat.

(If you don't have a cast-iron skillet, use a nonstick one.)

When the skillet is hot, rub a small amount of oil on the bottom.

Then add scoops of batter (about 2 tablespoons per scoop).

Cook pancakes until they are bubbly on top, then turn them.
