summer fruit sauce
200gmixed red berries
100mlPort wine
or red
1shallot
25gsugar
½ tspblack pepper
1 tspsalt
2 Tbspolive oil
1 Tbspbutter
100mlorange juice
1 Tbspbalsamic vinegar

Instructions
Steak Preparation
Step 1
Cover the steak in olive oil and sprinkle salt and pepper on both sides to taste, reserve.

Step 2
Dice the potato and bring it to boil in a big pan, add some salt
Step 3
Meanwhile chop the garlic, melt the butter in another pan in low heat and add the garlic, stir and cook for a couple of minutes. Add the spinach and cook it for 5 min or until wilted. Using a fine mesh strainer, drain the water from the spinach and squeeze out as much water as possible.
Step 4
In a food processor, add the drained spinach, the salt, black pepper, nut meg, butter and milk and whiz it until all blended.
Step 5
Once the potatoes are cooked, drain them and mix in the spinach pure, mash it altogether until you get the desired texture. adjust with milk and butter or salt if required.
Port wine and summer fruit sauce
Step 6
In a pan in low heat, warm up the olive oil, add the shallots and sugar, combine and cook it for a 3 min.
Step 7
Add the the fruits, cook it for 5 min and stirring occasionally until all softened up and it releases juices.
Step 8
Pour in the wine, stir up and cook until it reduces by half.
Step 9
Pour in the orange juice and the balsamic vinegar, cook it until it reduces by half.
Step 10
Take the pan off the heat, strain the sauce or blend it in a food processor and add butter to it until fully blended

Grill the steaks, lay them on each plate, lay a few scoops of mash on the side.

Pour the sauce over the steaks and top it with the chives
Step 13
Serve.
