Instructions
Step 1
Bring water to boil in lg saucepan over med-high heat. Stir in salt and baking soda. Slowly pour cornmeal into water in a steady stream while stirring back and forth with a wooden spoon. Bring mixture to boil, stirring constantly, about 1 min. Reduce heat to lowest setting and cover saucepan.
Step 2
After 5 min, whisk polenta to smooth out any lumps. Cover and cook without stirring until grains are tender but slightly al dente, about 25 min. Polenta should be loose and barely hold its shape but will thicken as it cools.
Step 3
Off heat, stir in parmesan and butter and season to taste. Let stand, covered, for 5 min. Garnish with extra parmesan.
