Ingredients

2 Tbspolive oil
2carrots
medium size, diced
2celery stalks
large, diced
1onion
diced
3garlic cloves
chopped
1 x 15 ozcan of crushed tomatoes
2 x 14 ozchicken broth
cans, or vegetable broth
4 slicesham
diced, optional
1 Tbspdry parsley
½ Tbspdry basil
1 x 15 ozcan of cannellini beans
1 ½ cupditalini pasta
salt
to taste
pepper
to taste
Instructions
Step 1
Heat the olive oil in a soup pot. Sauté carrot, celery and onion until soft.
Step 2
Add garlic and crushed tomato. Stir in the broth and spices. Let it simmer for 20 min.
Step 3
Meanwhile, drain the beans and set a pot of water to boil - for pasta. Cook pasta separately for about 9 min. This way you can control how hearty you want the soup to be.
Step 4
Add beans and ham to the soup pot and simmer for a few minutes. When pasta is done, stir it into the soup pot.
