Smoked Mackerel Pasta with Peas and Lemon

Instructions

Step 1
Add the tortiglioni to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat
Step 2
Peel and slice the onions finely. Peel the skin off the smoked mackerel and discard. Tear the smoked mackerel into rough, bite-sized pieces. Chop the parsley.
Step 3
Heat a large, wide-based pan with a drizzle of olive oil over a medium heat. Once hot, add the onion, chilli flakes, rosemary and lemon zest. Cook till softened.
Step 4
Add the peas to the pasta when it has 3 minutes remaining of cooking time.
Step 5
Add the smoked mackerel pieces to the pan with the drained tortiglioni, peas and a big splash of the starchy pasta water.
Step 6
Add the crème fraîche and the juice of 1 lemon to the pan.
Step 7
Season with a pinch of salt and a generous grind of black pepper. Add the chopped parsley to the pan and give everything a good mix up until fully combined and the sauce begins to stick to the pasta.
Step 8
Top with a very generous grind of black pepper Serve with a lemon wedge to the side.
