Calentita
Calentita was made using wood ovens in the streets, when ready it was served hot. The seller would carry a tray on their head and yelled "ESTA CALENTITA" ( It's Hot), which is possibly where the name came from. These were sold in thin slices for little money. It is a cheap common meal made in most traditional households. Calentita is the national dish of Gibraltar–an oven-baked meal that looks similar to a dark flour pizza without toppings. It is always served hot and consists of chickpea flour, water, olive oil, and seasonings such as salt and black pepper. This recipe was suggested by the Gibraltar Tourist Board.

Instructions
Step 1
In a bowl, mix together the chickpea flour, water, salt and pepper. Leave overnight or allow to settle for 2 – 3 hours before cooking.
Step 2
Preheat oven to 225°C.
Step 3
In your oven dish pour enough oil to cover the bottom.
Step 4
Place your dish in the oven to heat up the oil. Once the oil is hot, carefully using a brush, spread along all the sides of your dish. Stir your mixture and pour immediately into your dish.
Step 5
Place this back in oven for an hour.
